Let's make apple pie bars!
Step 1. Using a hand mixer or stand mixer cream the butter, powdered sugar, granulated sugar, and vanilla until fluffy, about 2 minutes.
Step 2. Whisk together the flour and salt, add it to the butter and sugar mixture in 2 separate batches, mixing until combined and a dough forms. Divide the dough in half. Press one half of the dough into the bottom of the pan, making sure to spread it out evenly. Bake for 20-25 minute or until very golden brown. The base must be golden brown or else the bars will be soggy.
Step 3.Mix together the sliced apples, cinnamon, nutmeg, cornstarch, and brown sugar until fully combined.
Step 4. Add the caramel sauce, mix until fully coated.
Step 5. Pour the apple mixture over the bottom crust, spreading it out evenly.
Step 6. Using the other half of the dough, tear off medium pieces and place on top of the apples, distributing the pieces evenly over the top. Bake for 35-42 minutes are until golden brown. The top should be golden brown so the bars don't turn out soggy.
Hint: Make sure the parchment paper goes up and over the sides of the baking pan for easy removal and clean up!

- ½ cup (104 grams) granulated sugar
- ¼ cup (31 grams) powdered sugar
- 2 teaspoons vanilla extract
- 2 ½ cups (348 grams) all purpose flour
- ¾ teaspoon kosher salt
Apple Filling
- 2 cups (288 grams) apples peeled and sliced ¼ inch (mix of honey crisp and granny smith)
- ¼ cup (75 grams) salted caramel sauce store bought or homemade (recipe linked in notes and FAQ)
- 2 tablespoons dark brown sugar
- 1.5 teaspoons cinnamon
- ½ teaspoon nutmeg
- 2 tablespoons cornstarch a must or else the liquid will not thicken
Caramel for finishing
- 3 tablespoons salted caramel sauce
Instructions
Shortbread
- Preheat the oven to 350°F. Line an 8X8 metal baking pan with parchment paper.
