S'more Blondies! Gooey marshmallow fluff and decadent dark chocolate nestled within a chewy graham cracker cookie dough. As they bake, the marshmallow fluff and chocolate create a mouthwatering, melty fusion!

Equipment

  • Food processor or blender for blending graham crackers
  • Mixing bowls
  • Rubber Spatula
  • Handheld or stand mixer
  • Parchment Paper

Ingredients
 

  • 114 grams unsalted butter
  • 157 grams dark brown sugar dark brown is best
  • 1 egg
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • 147 grams all purpose flour
  • 140 grams graham cracker powder pulverize whole graham crackers in a food processor or blender
  • heaping ½ teaspoon kosher salt
  • ½ teaspoon cinnamon
  • 200 grams marshmallow fluff can also be called marshmallow creme
  • 190 grams dark chocolate chips dark is best

Instructions
 

  • Preheat the oven to 350°F. Line an 8X8 pan with parchment paper.
  • Pulverize the graham crackers in a food processor or blender until a powder forms (very fine) set aside.
  • Using beaters or paddle attachment, cream the butter and dark brown sugar until fluffy, about 2 minutes.
  • Add the egg, egg yolk, and vanilla, mix until combined.
  • Whisk together the graham cracker powder, flour, cinnamon, salt, and baking powder.
  • Gradually add the dry ingredients while mixing on low. Mix until a dough forms.
  • Push ⅔rds of the cookie dough into the bottom of the pan, spreading it out evenly.
  • Spread the marshmallow fluff over the top, spreading it out evenly.
  • Sprinkle the chocolate chips evenly over the marshmallow.
  • Using the remaining ⅓rd of cookie dough, flatten small pieces spreading it out evenly on top of the chocolate chips (see photos in post)
  • Position it on the center rack of the oven to ensure even baking, avoiding placement too close to the top or bottom. Bake for 25 minutes or until the top is golden brown. Do not over bake, the bars will continue baking on the counter.
  • Enjoy when cooled down.

Notes

Room Temperature
Allow them to cool completely, then transfer them to an airtight container or sealable bag. They can be kept at room temperature for up to 3-4 days.
Freezer
First, ensure they're completely cooled at room temperature. Then place them in an airtight container or freezer-safe bag. Label the container with the date and contents before placing it in the freezer. When you're ready to enjoy them, simply thaw the blondies at room temperature for a few hours or overnight
