Blueberry Foam
¼cup half and half cold
1tablespoonblueberry syrup

¾cupmilk of choice
1shotespresso or to taste

Blueberry Syrup
Place the blueberries, water, sugar, and cinnamon in a medium saucepan. Bring the mixture to a boil, then reduce to a gentle boil and cook for about 20 minutes, until it has reduced and thickened. Stir occasionally and keep a close eye on it as it cooks.
Remove from the heat and let it cool down. Stir in the blueberry flavor paste until combined. Then blend until smooth in a blender and store in the refrigerator for up to 2 weeks in a tightly sealed container.
Froth
Froth the half and half together with the blueberry syrup until light and foamy. You can use a milk frother for the easiest method, or pour both into a small jar, seal it tightly, and shake vigorously until frothy.
Assembling the iced latte
Add the syrup to the bottom of a large glass, then fill the glass with ice. Pour in the milk, followed by the espresso, then pour the blueberry froth over the top. You can easily adjust the recipe to suit your taste, whether you prefer it sweeter, stronger, or with a little more blueberry flavor.
