I’ve made a lot of summer drinks in my kitchen, but this Tropical Mocktail might be my favorite yet. After testing it multiple times and tweaking the balance of tangy lime and creamy coconut milk, I knew I had something special!

Equipment

  • High powered blender

Ingredients
 

  • 2 heaping cups Frozen Tropical Fruit Blend (must be frozen) I used Cape Cod Select
  • ½ cup Coconut milk (full fat) If it is too thick, stir and microwave in a glass bowl for 5-10 seconds until it is liquid.
  • 2 limes, juiced
  • ½ cup sweetened condensed milk

Instructions
 

Tropical Mocktail

  • Add the frozen fruit, coconut milk, sweetened condensed milk, and lime juice to a high powered blender.
  • Blend until smooth, adjusting the amount of coconut milk to reach your desired consistency.
  • Serve immediately. This mixture is best enjoyed fresh, as refrigeration can cause separation. For a longer lasting treat, pour the mixture into popsicle molds for a fun popsicle or a freezer safe container. If freezing in a container, thaw gently before drinking again.

Notes

Coat the rim of your serving glasses with honey or agave, then press them into finely chopped coconut for a fun tropical touch.
Boozy twist: A shot of coconut rum or banana liqueur turns this into a poolside tropical cocktail in seconds.
