Cornflake Slices

This no bake treat is one of my longtime favorites because it always turns out perfectly. The chewy, buttery cornflake base is mixed with creamy peanut butter and gooey marshmallows, then finished with a smooth layer of dark chocolate that gives it that perfect snap once it sets.

  • Large metal pot
  • Mixing bowls

Ingredients
 

  • 5 tablespoons (71 grams) salted butter
  • 5 cups (283 grams) marshmallows for melting
  • ½ cup plus 2 tablespoons (157 grams) peanut butter creamy, not natural (I like Skippy)
  • 4.5 cups (161 grams) Cornflakes cereal unsweetened (I like Kellog's)
  • 1 cup (62 grams) mini marshmallows do not melt

Topping

  • 1 cup (166 grams) dark chocolate melted

Instructions
 

  • Line an 8X8 pan with parchment paper. In a large pot over medium heat, melt the butter and marshmallows. Stirring until completely melted.
  • Take the pot off of the heat. Add the peanut butter, mix until combined and melted.
  • Pour in the cornflakes, Mix until almost combined, pour in the mini marshmallows. Mix until completely combined and coated.
  • Pour into the parchment lined pan. Spread it out evenly, making sure to push it down a bit to get into the corners of the pan.
  • Pour the melted chocolate over the top, spreading it out evenly. Place in the refrigerator until the chocolate is set. Take out and top with flaky sea salt.
  • Cut into bars and enjoy!

Notes

Non natural peanut butter is the only peanut butter that will work, I like Skippy. Natural peanut butter is too oily.
Regular marshmallows are best for making these bars, vegan marshmallows will not work.
When mixing the marshmallows into the cornflake and peanut butter mixture, reserve the 1 cup of marshmallows and gently fold them in at the end. This ensures you have pockets of gooey marshmallow goodness throughout the slices, adding amazing texture and chewiness.

Refrigeration
It's best not to refrigerate the slices, as this can alter their texture and make them overly firm or dry. Keep them at room temperature for the best taste and texture.
Freezer
If you'd like to extend the shelf life, you can freeze the slices. Place them in an airtight container, separating layers with parchment paper to prevent sticking. When ready to enjoy, thaw the slices in the refrigerator overnight or at room temperature for a few hours.
