Step 1. Place the cooled down butter, almond extract, dark brown sugar, granulated sugar, vanilla, egg, and egg yolk in a medium bowl. Beat until combined and smooth.
Step 2.Whisk together the salt and flour, add it to the wet ingredients. Mix until combined.
Step 3. Roughly chop the Oreos and white chocolate.
Step 4. Fold in the Oreos, sprinkles, and white chocolate.
Step 5. Pour into the pan, spreading it out evenly. Top with chopped Oreos and sprinkles (optional)
Step 6. Bake for 22-25 minutes or until the top is set and a toothpick has a few moist crumbs. Let it cool in the pan on the counter before cutting.
Hint: When lining the pan with parchment paper, have it go up and over the sides for easy removal.

- Do Not Over Bake: To ensure your blondies remain fudgy and chewy, avoid over baking. Insert a toothpick into the center of the blondies a few minutes before the suggested baking time is up. If it comes out with a few moist crumbs attached to it, they are perfectly baked. Over baking can lead to dry and crumbly blondies, keep a close eye on them.
- Cool Before Cutting: Allow the blondies to cool completely in the pan before cutting. The results will be thick and chewy.
- Roughly chop the Oreos: I don't love small pieces of Oreos, roughly chop them so they're on the bigger side so you really get a good bite of Oreo throughout the blondies.

- 225 grams all purpose flour
- ½ teaspoon kosher salt
- 155 grams Birthday Cake Oreos roughly chopped (you can also use Golden Oreos if you prefer)
- 105 grams white chocolate high quality, roughly chopped
- 52 grams rainbow sprinkles also known as "jimmies"
Instructions
- Preheat the oven to 350°F. Line an 8X8 metal baking pan with parchment paper.
- Melt the butter, set aside to cool.
